《八爺烤鴨》是根據本店董事長花雷先生的創意,有本店大廚及相關技術人員經多次研制開發,形成了與傳統烤鴨口味截然不同的烤制菜肴,八爺烤鴨是以提前腌制入味,改變佐料,改變口味,實尾島産生變化,有芥末、辛辣、果味複合口感刺激的新型烤鴨。花雷先生在家中排行老八,周圍兄弟哥們平時按老北京習慣稱其“八爺”,由于此種烤鴨的烹饪烤制構思與調味創意于“八爺”,故稱之爲《八爺烤鴨》。

北京城有很多寶藏,而這些寶藏多就埋在最有北京味道的地方——四合院。花家怡園的第一家店就成長在這裏。經曆了十年的不斷變遷與擴大後,才有了今天的規模。在一次對店面改造的時候,我們意外的挖出了一本包在油紙包裏的線裝古書,竟然是雍正年間的《禦膳筆抄》,其中詳細的記載了“炙鴨”(舊時烤鴨的稱呼)的方法。花家怡園的技術人員看到後,不禁對前輩的技術肅然起敬,經過悉人的鑽研與改良,終于創出了皮脆肉嫩、果香多汁的宮廷禦膳烤鴨,將故百年前的清•雍正王朝烤鴨重現于顧客面前。
